Here are some decorations from my Christmas season this year! I made a lot of decorations over the years but most of this came from thrift stores and clearance sales.

Pork dumpling soup

Pork wonton soup. Oh my! It’s soooo good. And a perfect way to use up leftover pork roast. So this is how easy it is:

Leftover pork
Splash soy sauce
2 tbsp hoisin sauce plus one more for broth
Sesame seeds or a few drops of  oil
Green onion, sliced
Ginger, grated

Mix all above and place in center of wonton wrapper. Wet edges, fold opposite corner and seal edges. Try to get all the air out. Some of my dumplings blew up and I think it was because of the air bubbles…

For the broth, a few cups chicken broth and 1tbsp house sauce. I sliced some ginger and a few more green onions. Bring to boil and gently drop in dumplings. It only takes a few minutes.

I topped with chili sauce and sesame seeds. And slurpped my bowl clean…. ahhh. Bliss.

French vanilla creamer

Can of sweetened condensed milk Can of milk Splash of vanilla Pour sweetened condensed milk into vessel with a sealable lid. Fill empty can with milk and pour into jar. Add vanilla and shake it up!!

I Am An Asparagus Hunter

This was well worth the effort. I walked the ditches around the area and gathered asparagus. The ones on the left came from a well groomed patch. See how They’Re straight and more uniform in size? The right side came from under fence lines and talk grass. Both grow wild in the ditch and taste the same.

I like to sort by length. And store accordingly. I dampen paper towels and wrap the end of a bunch and SEAL in a zip lock baggy. Keep it in the fridge for up to a week, give a few days.

Kabobs

We made AND GRILLED kabobs yesterday! It is definitely one of my favorite things to eat. They’re fun to make. We marinated beef and chicken in our own mixture of oil, soy sauce, worschestershire, fresh ginger and spices. Its delicious on any meat. We also skewered some brats. And of course veggies. And my favorite: pineapple and watermelon. It was a feast.

Big Soft Pretzels

I made these soft pretzels for the first time yesterday. They were so simple and OH, so tasty! They taste just like my favorite pretzel stand pretzels. Because I am feeling lazy today, I’m just going to post a picture of the recipe card. There is a secret ingredient. Well, it wont be so secret anymore! Worth it.

Can you see what the secret is? That’s right! It’s powsered sugar. Who knew?

The two items on the right were just ideas for mix ins. I do that a lot with my recipe cards. The next set of photos are just a small set of the process. It was so fun. It smelled so good. I will have to make them again.

 

 

Slow Cooker Meatball Recipe

This recipe is so fast and so easy, you’ll want to make it tonight.

Ingredients:

Meatballs:

1lb. Hamburger

3/4 c, Italian bread crumbs (I crushed croutons because it’s what I had)

1/2 c milk

1 egg

1 onion, chopped fine

Handfull parmesan cheese

salt and pepper

italian seasoning

1/4 c flour, to coat the meatballs after shaping into balls

Sauce:

bay leaf

1 28oz can crushed tomatoes

1 or 2 bell peppers (I used hald jar of roasted red pepper in oil), Chopped

1 onion, chopped

couple cloves of garlic, chopped

handful parmesan cheese

pinch crushed red pepper flakes

salt and pepper

whatever seasonings you like

So you combine all your meatball ingredients, sans flour, and roll into about 2 inch balls. Toss in flour to coat. Set aside.

Combine all sauce ingredients and pour half into bottom of crock pot. Lay in the meatballs. Top meatballs with remaining half of tomato sauce mixture.

Cover and set slow cooker on low about 6 hours. It really is that simple. If you wanted, you could sear your meatballs so they have that nice crust on them. I will try that next time.

I served these on whole wheat rolls. I thawed frozen bread dough and then cut each loaf into quarters and shapped into mini loaves. I could really see these meatballs over pasta or rice.

I also think the roasted red peppers in olive oil really did something nice in there.
